			<content:encoded><![CDATA[<p><em><strong>Our Beloved Mother Nature and Our Precious Earth is in our HANDS.....let  us UNITE and love what has been so graciously given to us with respect  and honour.....Please read on:<br /> <br /> Ever since 1948, when i became deathly ill, which took me away from a  very successful football career, I made the wise choice to become a  vegan. There have been times I have eaten a bit of butter here and  there, but mostly I am a vegan, and am proud to say this kind of diet is  part of the reason, at the age of 87, that I still have an enormous  amount of vitality and energy.</strong> <strong><br /> <br /> Veganism makes for a healthy human being...a life that is, in my  opinion, a disease free life.</strong> <strong><br /> <br /> Obviously juicing is a huge part of my regime, and lots of fresh fruits,  but without my vegan principles, they are just great healthy habits,  not life transforming, humanity sustaining lifestyles.</strong> <strong><br /> <br /> In my opinion,Veganism can save our Earth and it can save our precious,  God Given Vital Health.</strong> <strong><br /> <br /> I know you must be thinking my age is getting the best of me, to make  that kind of a stark statement, but I have been around for a long time,  and have come to realize, that we, as humans have ALL the power.</strong> <strong><br /> <br /> Nobody can change us, if we UNITE.</strong> <strong><br /> <br /> There is power in numbers. Think about Ghandi......he was just a man,  but he realized there were millions and millions more Indians than there  were British. He knew, that if he could persuade them to support the  new freedom of life awaiting them, they could liberate themselves if  they united! We have been extremely fortunate to have had this great  soul on our planet.</strong> <strong><br /> <br /> There IS power in numbers.</strong> <strong><br /> <br /> Imagine if we could all just stop the over consumption of eating flesh  foods, this move, in itself would stop the insanity of factory farming,  it would help stop global warming, it would help save our forests, it  would create a gentler humanity, it would help save our dwindling water  table, that has been almost entirely drained, due to cattle  feeding...and it would help feed our starving brothers and sisters on  this planet of ours. Did you know 15 million children die every year of  starvation? That does not even count adults.</strong> <strong><br /> <br /> The lists go on and on and on......</strong> <strong><br /> <br /> Over breeding of pigs, chickens, cows and sheep (in other nations) has  become out of control, triggering millions and millions of pounds of  their flesh to be destroyed due to ecoli outbreaks, time in and time  out.</strong> <strong><br /> <br /> We are now recklessly mowing down forests in other countries so that the  farmers in those Countries can profit on our, seemingly insatiable  desire for Cow meat, yet, even though it's not our Country that is  losing its forests, by the droves, they are still forests that belong to  our Earth, and this Earth is all we have.</strong> <strong><br /> <br /> We ARE all connected.</strong> <strong><br /> <br /> The inhumanity we perpetrate upon veal is another horrifying reality  that most just don't want to look at or acknowledge. I would rather not  discuss it here because to offend anybody is not my motive, and I  realize we all come to these awareness in our own time. I find it's my  duty to share what I have spent over sixty years teaching and living,  that if we could just do one thing to help our world, then by going  vegan would be the most successful one choice that would impact  EVERYBODY and EVERYTHING.</strong> <strong><br /> <br /> I ask you, and try to appeal to your conscious mind, to please think  about your pets you love so much. Your loyal dog, and your sweet cat or  bird that is yours and gives you so much joy and pleasure....that each  animal has his/her own personality, and that cows and sheep and pigs all  have sweet personalities, each one unique in their own way.</strong> <strong><br /> <br /> These animals we torture, kill and eat are just as precious and unique  as our own pets.</strong> <strong><br /> <br /> I am not asking you all to become vegans overnight. I am just asking you  to think about where your burger comes from the next time you order  one. And then, if you can, imagine choosing another meal choice that  does not carry the profoundly negative ramifications that flesh foods  create.</strong> <strong><br /> <br /> Besides my deep spiritual beliefs in God and our Beloved Earth, I do  believe Veganism can help save humanity and our planet.</strong> <strong><br /> <br /> One last thing...don't forget to JUICE your greens!</strong> <strong><br /> <br /> A Green You makes for a Green World.</strong> <strong><br /> Jay Kordich</strong> </em></p>

That's why we called our book,  The Juiceman's Power of Juicing, because it is, to us, one of the most  powerful way of changing our lives for the better.  Our new book that we  wrote ourselves (self-published) Live Foods/Live Bodies, is our  favorite book and a book so many people are raving about. This is a book  publishers couldn't EDIT! Where we  live, there is a store called Cash and Carry for restaurants in our  city.  <br /> <br /> If you pay with a debit card or with cash, anybody can purchase, so you  don't have to be a restaurant owner.</strong> <strong><br /> <br /> We found out about it through some friends, and sure enough, we were  shocked to see how reasonable and fresh these greens were!</strong> <strong><br /> <br /> For example, you can get fresh mint, fresh parsley, fresh spinach for  next to nothing. We stock up on these large bags, go home and soak and  wash thoroughly, our greens, with pesticide wash remover.</strong> <strong><br /> <br /> We then spin dry the greens and store them in large rectangular and  square containers.</strong> <strong><br /> <br /> These greens last an entire week......and all for just a few dollars!</strong> <strong><br /> <br /> We just 2 quarts of green juice per day for our family ~ and we can  assure you that we get through, usually about seven days, without having  to purchase more greens. Preparation.</strong> <strong><br /> <br /> #2. Organization</strong> <strong><br /> <br /> #3. Storage</strong> <strong><br /> <br /> #4. Juicing</strong> <strong><br /> <br /> #5. Clean up</strong> <strong><br /> <br /> <span> ==========================</span> </strong> </em></p>
<div><em><strong><span>==========================</span> </strong> </em> <em><strong>======<br /> <br /> Today we are sharing with you &quot;Preparation&quot;</strong> <strong><br /> <br /> #1. Preparation:</strong> <strong><br /> <br /> Clean your kitchen before you go to the store. When you come home from  the store with your fresh greens and produce, your kitchen will be  ready. It will also be mentally and physically easier to prepare.</strong> <strong><br /> <br /> Fill your sink up with cold water and place all your greens, apples,  carrots into the sink.  If your produce is not organic, then make sure  to soak for several minutes, a good pesticide wash, and then rinse your  produce and spin dry (greens only) in a salad spinner to make sure all  your greens are dry. Dry greens stay for a good ten days to two weeks,  properly prepared and stored.</strong> <strong><br /> <br /> Double Zip-lock bags are great for storage if you don't have square,  oblong, or rectangular storage containers.</strong> <strong><br /> <br /> Make sure you have some Quart Jars or Stainless Steel Containers (to  contain your juice for work or for when you are on the go.) Jars are  cheap, and keeps the juice well only for the refrigerator (not more than  six hours...so be careful not to let your juice sit too long, it breeds  bacteria when it is store for more than six or seven hours.</strong> <strong><br /> <br /> Find a wholesale grocery store for your greens. Here in Washington, we  have a store called Cash and Carry. We buy, once a week, from Cash and  Carry, super huge bags of fresh parsley, fresh basil, fresh mint,  cucumbers and kale.  The prices are incredible because these foods are  for restaurants, and since we pay with cash, it's open to everybody,not  just restaurant owners. We stock up on these greens, and then use the  grocery stores, or organic grocery stores nearby to finish our shopping.</strong> <strong><br /> <br /> Purchase sturdy large rectangular, square or oblong containers to store  your greens inside.  When you get home, wash your greens and store them  in these containers, so that when its time to juice, all you have to do  is bring the containers out of the refrigerator and to the sink, so that  the ease of juicing seems to inspire us to juice more and more.</strong> <strong><br /> <br /> Once you JUICE what it is you like, snap back the lids onto the  container and slide back into the shelves of your refrigerator, and you  are good to go the next time you juice.</strong> <strong><br /> <br /> Preparing your refrigerator is quite important too.  For example,  carrots.  Carrots should be washed (brushed) and the ends cut off when  you get home from the grocery store. Store in the crisper of your  refrigerator, and what we do is put semi wet paper towels on the base of  the drawer and the put the carrots on top of that, then cover them with  paper towels to keep them moist and protected.</strong> <strong><br /> <br /> With apples, you can do the same as carrots, but sometimes what we do is  cut them up beforehand </strong> <strong><br /> and store them in our airtight containers. This makes juicing by far  easier and faster, but with apples, we take a bit of lemon juice and  sprinkle it over the apples to keep them from oxidizing ~ but sometimes  that takes too much time, so we just keep our apples in the crisper  (separate crisper from the carrots) and then cut them upw hen we are  ready to juice.  <br /> <br /> Our new Juicedaddy 2 in 1 juicer has a large mouth, so most of the  apples can fit through the mouth without having to cut them in pieces.  However, when we are juicing with our GreenStar Elite, we use apples  with our greens and with this Juicer, you have to cut the apples in  small pieces to get them through the hopper.</strong> <strong><br /> <br /> (Berries can be treated like greens....they are fragile and need to be  preserved in containers with a bit of water so they can stay fresh.)</strong> <strong><br /> <br /> We will share our #2 of our 5 Easy Steps for Successful Juicing  tomorrow!</strong> <strong><br /> <br /> Happy Juicing from Jay and Linda Kordich</strong> <strong><br /> </strong> </em> <br /> <br />

So I had to think quickly, because they were journalists,  AND I do believe they were  interested in seeing how good we would be in  our kitchen, spur of the moment!  <br /> <br /> (they were doing a story on our new book; Live Foods/Live Bodies)</strong> <strong><br /> <br /> As I freaked out (quietly of course) our fridge didn't have much in it,  AND they weren't vegetarians nor were interested in being converted.</strong> <strong><br /> <br /> I found myself stressing about this entire thing.... but then I thought  ok.....what do we have in the house I can just throw together?</strong> <strong><br /> <br /> Here's what we had:</strong> <strong><br /> <br /> 1.  freshly made corn tortillas (12)</strong> <strong><br /> 2.  tomatillos<br /> 3.  onions<br /> 4.  fresh cilantro<br /> 5.  parsley<br /> 6.  corn<br /> 7.  red potatoes<br /> 8.  black beans<br /> 9.  cabbage<br /> 10. carrots<br /> 11. apples<br /> 12. limes<br /> 13. cucumber<br /> 14. ginger<br /> 15. roasted salsa <br /> <br /> <br /> I immediately thought, let's just make a good vegan potato enchilada  recipe and just stuff it with veggies and make a good green sauce with  what I have and hope for the best!  Luckily, it really DID come out  beautifully, but here are some tips you will need to make sure don't  happen, so your meal will be successful:</strong> <strong><br /> <br /> #1.  Make sure to make enough green sauce to pour over every layer,  including the top so that the enchiladas will be moist.  Because we are  not frying the tortillas, they need to be moist when we go to cut pieces  out of the dish. </strong> <strong><br /> #2.  Put the cole slaw at the side of the dish when you are placing the  square enchiladas onto the plate.<br /> #3. The chopped onions should be sweet onions and the olives are good  over the top.  You can also put more diced cilantro and/or parsley over  the top with the onions and olives, but don't put lettuce over the top.  We don't want the lettuce to compete with the cole slaw.<br /> <br /> <span> --------------------------</span> </strong> </em></p>
<div><em><strong>-----------------------<br /> <br /> </strong> <strong>VEGAN POTATO ENCHILADA<br /> <br /> I used the 8 small tomatillos and cut them in quarters; added 1/2 cup  diced onions and steamed for 30 minutes. I then added 1 cup lightly  packed cilantro; 2 tbsp. brown sugar, 3 cloves garlic.  i cooked it for  another 5 minutes and then blended it all in the blender.</strong> <strong><br /> <br /> Meanwhile, I steamed the 8 red potatoes (cut in cubes) and smashed them  up when they were soft, adding salt and pepper, fresh corn and frozen  peas (one cup each), black beans (1 cup) and 1/2 white onion (diced).  I  mixed it all together.</strong> <strong><br /> <br /> I then used a large ceramic rectangular deep dish (6 by 9), and placed  four corn tortillas at the bottom of the bowl, then put the potato  spread over the top and then sprinkled a little over the top with the  green sauce, and then covered again with four tortillas, then covered  the tortillas with another layer of the potato filling, then adding more  of the green sauce, then topped it off with another layer of tortillas.</strong> <strong><br /> <br /> To finish it off, I added the rest of the green sauce over the top (it  should cover the entire dish) and then took another 1 cup of roasted  salsa I had from earlier in the week, down the middle of the dish so as  to make it look good (red and green!).</strong> <strong><br /> <br /> I cooked it at 400 degrees for 40 minutes (covered with foil to make  sure the top tortillas don't get crispy.).</strong> <strong><br /> <br /> Once it was done, I chopped raw onions and black olives and sprinkled  over the top.</strong> <strong><br /> <br /> <span> --------------------------</span> </strong> </em> <em><strong><span>--------------------------</span> </strong> </em> <em><strong>-----<br /> <br /> I made a decent cole slaw to go with it:</strong> <strong><br /> <br /> </strong> <strong>COLE SLAW**<br /> <br /> 4 cups super thinly sliced shredded green cabbage</strong> <strong><br /> 2 cups diced (very thinly) carrots<br /> 1/2 cup cilantro (diced)<br /> <br /> dressing:  black pepper and cider vinegar.</strong> <strong><br /> <br /> <span> --------------------------</span> </strong> </em> <em><strong><span>--------------------------</span> </strong> </em> <em><strong>------<br /> <br /> </strong> <strong>SUPER GREEN DIGESTIVE COCKTAIL JUICE!<br /> <br /> We then, of COURSE made a good green juice to drink before our meal:</strong> <strong><br /> <br /> 2 cucumbers</strong> <strong><br /> 2 large limes<br /> 6 ribs celery<br /> 1 inch fresh ginger root<br /> (I used the rest of the cilantro....stems and all....about 1/2 cup)<br /> 2 cups fresh parsley<br /> 2 large fugi or golden delicious apples<br /> <br /> YUMMMMMMY!</strong> <strong><br /> <br /> <span> --------------------------</span> </strong> </em> <em><strong><span>--------------------------</span> </strong> </em> <em><strong>--------<br /> <br /> So, guess what? </strong> <strong><br /> <br /> They LOVED the meal, felt full and didn't realize that this entire meal  was VEGAN and highly nutritious. </strong> <strong><br /> <br /> We didn't use ANY oil, nor any animal products....so it was also very  much A LOW fat meal.</strong> <strong><br /> <br /> And.............I didn't realize that just making something from nothing  is far easier than one would think!</strong> <strong><br /> <br /> **(Don't underestimate the coleslaw salad....it's utterly delicious this  way. Just make sure that the cabbage is very very thinly cut, with the  carrots being just a bit more thick. ) </strong> <strong><br /> <br /> ENJOY! :)</strong> <strong><br /> <br /> Oh....one more THING.....Jay had actually made an appointment with them  and forgot to tell me ~ once they left he said, well, Linda......I  remember now they were coming over. </strong> <strong><br /> <br /> Needless to say, I wanted to KILL him!  But of course ..... he is just  too adorable to be mad.  And meanwhile I do believe it ended up being so  much more interesting for all of us!  They getting to see us in action  at the spur of the moment, and US putting something together  spontaneously.</strong> </em>

Chop wood/carry water is a  big part of our living kitchen. We need to begin to feel comfortable in  our kitchen, to relax...creating it to become a sanctuary for us.  Most  of us have negative images in our head and heart about feeling as if we  are the ones who 'have' to buy produce, prepare meals, clean up after  the meals, because the rest of the family is too busy with their lives,  so we end up feeling resentful, and unappreciated.<br /> <br /> Chop wood/carry water is a Zen-like approach towards learning to love  the discipline and patience it takes to embrace something we need to do  everyday of our lives. Let's face it, we have to face our kitchens more  than once, if not twice or three times daily.  We are responsible for  nourishing ourselves and our families health and wellness. Chop  wood/carry water means practicing something on a daily basis with these  virtues such as patience and respect, reliability and perseverance laced  with love and appreciation, so that in time we become 'ONE' with  ourselves and our relationship to our kitchen instead of this defunct  and dysfunctional daunting responsibility we used to see our kitchens as  being.</strong> <strong><br /> <br /> Here are some ideas how you can start practicing to build your own  living kitchen:</strong> <strong><br /> <br /> 1. keeping our kitchens clean on a daily basis</strong> <strong><br /> 2. keeping our kitchens spices, pantry and refrigerator organized<br /> 3. supporting our kitchens  with living appliances<br /> <br /> 4. keeping our refrigerator filled with living foods and greens,  prepared for juicing and supersalads.</strong> <strong><br /> 5. lighting a candle in our kitchen to give reverence to mother nature,  our loved ones and to our own divine self.... out of gratitude for these  gifts and opportunities.<br /> <br /> 6. Place flowers from your garden or from the florists onto your kitchen  island or near your sink.</strong> <strong><br /> <br /> <br /> Now what?</strong> <strong><br /> <br /> On a saturday, when most of us want to sleep in or go shopping...why not  turn on your favorite cd, light a candle and re-do your kitchen?  Clean  out the pantry, the refrigerator, wash the floors, buy flowers or  better yet, pick some fresh herbs from your garden or buy some to make   your kitchen smell fragrant. While you are working in your kitchen, you  can clean and store your greens for the week and cut your carrots and  beets for either juicing or super salads.</strong> <strong><br /> <br /> Relax into the chop wood/carry water principle.  Consistent presence in  your kitchen by building these rituals twice a month to ensure your  relationship with your kitchen is alive and well is the road to loving  your living kitchen.</strong> <strong><br /> <br /> With consistent dedication laced with love....real devotion and love,   your kitchen will start to take on a new face, and you will start to  resonate more with seeing it as a sanctuary rather than a place of  dis-connection, drudge or duty.</strong> <strong><br /> <br /> Once you get your kitchen nicely organized, you can start to think about  replacing some of the appliances that do not support living  health..with empowering &quot;living kitchen&quot; appliances.  Then you will  start to wake UP to the fact that juicing daily, eating supersalads,  keeping a beautiful kitchen is absolutely transforming!</strong> <strong><br /> <br /> Depending on how old you are, you may well have negative memories  relating to nourishment or your kitchens, meals, etc.,. where nobody was  home, nobody cared, or if they cared, the food was purchased from  restaurants, fast food places, or perhaps put together without much care  for nourishment or love. It threatens many people who still think that eating animal based  foods is the ultimate way to eat, or the only kind of diet humans should  be eating, or are feeling defensive, because food habits can be quite  personal and hard to change.<br /> <br /> However, as Jay and I both age, we can see that the ONLY way we will be  able to sustain ourselves on this planet in the future, in an empowering  and healthful way,  is if we can unite as much as we can by changing  our ways of eating, thinking and sustaining ourselves.</strong> <strong><br /> <br /> Obviously there are so many other ways we need to do to transform the  way we live on this planet, but since Jay and I have been teaching a  non-violent diet for over 100 years, collectively, we want to focus on  what we know and what we have observed for many decades.</strong> <strong><br /> <br /> Changing our diets is the fastest and most effective ways we can change  our world today......</strong> <strong><br /> <br /> But the bottom line, is most of us are attached to the ways we think and  live, eat and express ourselves, but we are asking you to try to  imagine our lives being rich in vitality, longevity and balance.....THIS  is what a Vegan Diet can and will do for YOU!</strong> <strong><br /> <br /> Next time you reach for a meal, or go to the grocery store, try to go  just one week without eating foods that are animal based.....try to  juice everyday some powerful greens like the one recipe we are leaving  for you today and then see how you feel. 			<title>My Grandmother My Mentor</title>

			<content:encoded><![CDATA[<p>I came from a cold hearted family background growing up as a child, and 
yet on the other side of that icy life,  living under the same roof, was
 my beautiful Grandmother who was a trained professional chef and my 
only saving grace in a family where I never felt safe or loved<br>
<br>
I can see her face now!   Grey hair pinned back with bobby pins, petite 
yet elegantly dressed in a long black skirt, heels and stockings, 
wearing a perfectly ironed white blouse and a string of pearls....Her 
kitchen blossomed with fragrant vegetarian foods, looking pristine and 
inviting.  <br>
<br>
She was dedicated to bringing beauty in every meal.  To her, everyday 
was a holiday when it came to mealtime.<br>
<br>
Oh how I wanted to learn from her, as I would stand in the kitchen next 
to her time in and time out asking her questions, and all I can seem to 
remember her telling me is, "Oh I don't know, it's a little bit of this 
and a little bit of that...."<br>
<br>
But it was her Organic Vegetable Gardens and Fruit trees that were 
secretly the envy of our neighborhood!<br>
<br>
Not that anybody ever really showed that they cared.  In the 60's most 
people saw our family as 'weird'.....it was like we were living in the 
depression times, growing a garden they would say.  And that black thick
 bread....why would they eat 'that'.....when they could eat Wonder 
Bread? (hum....I wonder!)<br>
<br>
This was 1960, where every woman was touted as being modern and free of 
kitchen slavery, so that is how the TV frozen dinners came about, and 
the vodka martini before and afer dinner came about....Webber's bread 
and Captain Crunch.<br>
<br>
Nobody seemed to have time for cooking back then, but luckily I was 
blessed and graced with this work of ART called Gertrude Dahl, my 
Grandmother.<br>
<br>
We lived in San diego, on a cul de sac, in a regular home with a regular
 backyard, yet..... she made it like a garden of eden.  We had 
rutabegas, lettuce, romaine and peas, tomatoes and cucumbers, 
blackberries and peach trees.  <br>
<br>
My bedroom window faced the garden, and I can remember in the 
summertimes, the garden seemed to just come alive with excitement!  
Vines with tomatoes and peas were growing so rapidly, I could swear they
 were growing right in front of my eyes.<br>
<br>
On every Tuesday afternoon, I found myself rushing home from school, 
knowing what was to be the highlight of my day.... her freshly baked 
brown bread buns cooking in the oven...and alll I could think about was 
cold butter on warm buns, and my heart felt at home.<br>
<br>
Even under the frightening circumstances I had to endure from my family,
  my grandmother defiantly still kept a beautiful home and created three
 course meals nightly for years and years and years.<br>
<br>
It takes a strong woman to create that kind of atmosphere, and now that I
 am older, it humbles me.<br>
<br>
Do you have a memory of someone special in your life who has lived in 
your heart and soul for decades, bringing back memories of a happy life 
that they selflessly shared with you?<br>
<br>
How do we pay back to those who have created such a beautiful life for 
ourselves, if they are no  longer here?<br>
<br>
Well, I can tell you, despite the life I had to endure growing up, it 
was my Grandmother I remember with love and gratitude.  Now that I am 
older and a bit wiser, I dedicate all of my devoted kitchen habits and 
commitments to vital health, to her.  This way, she lives on inside of  
me.<br>
<br>
For a woman, migrating from Norway in 1930, independently, a 
professional chef, unmarried and highly driven to find greater 
independence and success in America.....this is someone I can admire.  
It wasn't until she was 42 that she married and eventually had my mother
 at the age of 44.  <br>
<br>
I can still hear her voice with her Scandinavian accent calling my 
name...".Leenda! Leenda!.....breakfast is ready, hurry up for school.: 
As I scrambled into the kitchen, there it was....a beautiful plate 
setting all set up for me and my sister, with swedish pancakes and home 
made jam spread on top.  I didn't realize at the time what a blessing 
she was in my life, that is, until the last time I saw her.<br>
<br>
It was 1980.....many decades later......<br>
<br>
There she was....standing by the door of my parents home, holding the 
screen door wide open for me, smiling big and bright.  She couldn't have
 been more than 5 foot, max, she was so petite.... and how I loved her 
perfectly ironed Norwegian aprons.<br>
<br>
As I hesitantly walked through the front door, I was hoping and praying 
nobody was home, so it could be Grandma and me, and as I walked further 
into the kitchen I could see the coast was clear.<br>
<br>
If my parents didn't like me when I was young, now they really hated me.
  I had just defiantly married Jay Kordich, a man 32 years older than 
myself;  penniless and a confirmed bachelor at 57, they swore I would 
never see them again nor my Grandmother.<br>
<br>
Frail as she was, she insisted she make some tea and toast, asking me 
about my new husband and then as we eventually said our goodbyes, she 
did something I never expected her to do.  She hugged me so hard, even 
with that little frame of hers.....digging her head into my chest, I 
could feel her warm tears  bleeding through my blouse.<br>
<br>
I started to weap but tried to keep my cool.....too much emotion from me
 would have ruined her tenderness being shared at that moment.  She was 
such a strong woman, I had never seen her vulnerable and soft like this 
before.<br>
<br>
I didn't know what to do, so I just let her hold me as I gently held her
 back, comforting her tightly but elegantly pinned back french twist.  
Eventually she released her grip, looked up at me with her tender, wet 
and piercing green eyes, softly expressing to  me in her sweet Norwegian
 accent, how much she loved me and that she was sorry I had been thrown 
out of the family as if I were a worthless rag.<br>
<br>
I told her it didn't matter what anybody said about me, even if it was 
my parents! What mattered was that we had a chance to see each other and
 say our goodbyes. <br>
<br>
I shared with her how much I loved my new husband, and yes it was a 
different kind of marriage, but that we were dedicated to something 
greater than ourselves and not to worry ever.  I had a life I had to 
live, and that we would see each other again.<br>
<br>
As I backed my car out of the driveway, I could faintly still see her 
frail and gentle hand continuing to wave goodbye to me as I drove away 
and disappeared out of sight.<br>
<br>
I never saw her again.  <br>
<br>
She died two years later at the age of 91, and of course I was banned 
from the funeral.  It was ok, even though I mourned her death greatly, 
for many years,  I felt we had a powerful love connection that nobody

Although i promised her then as I promise her now, I will continue to 
honour her by teaching the beauty and virtues of preparing healthy foods
 at home so that my children and grandchildren will naturally have that 
knowledge they can pass on to their children and grandchildren, and the 
many millions more who have read our books, we have been so privileged 
to write.<br>

So on this day.... today....30 years later....on THIS EXACT DAY.... I 
send my deepest heartfelt gratitude to her for loving me 
unconditionally, and for handing down to me these pricelessl skills to 
help us become a better parent for a grander humanity.<br>

It is an excellent source of pro-vitamin A, vitamins C, D, E, K,  B1 and B6.<br /> <br /> It is rich with biotin, potassium, calcium, magnesium, phosphorus,  organic sodium and some trace minerals.<br /> <br /> These known phytonutrients in carrots are lutein, lycopene,  anti-oxidants alpha, beta and gamma carotenes, zeaxanthin and  xanthophyll.  Phytonutrients and antioxidants are nature's marvelous  provision to help the healing of various food related or overconsumption  related diseases.<br /> <br /> <br /> <br /> Benefits<br /> <br /> Carotenes, (carotenoids) the most powerful ingredient in carrots, is an  anti-oxidant that has tremendous healing virtues for many diseases.
