My answer is of course!
I use carrots frequently in juicing because they are naturally sweet, they are rich in beta-carotene and they are almost IDENTICAL TO THE structure of our HUMAN BLOOD...did you know that?
There have been many studies and serious talk about sugars and carrots, and since diabetes is so rampant in society today, I have taken it upon myself to give you a good link that discusses the tests done on carrots and their juice and how our bodies react to them. Remember, that if you eat two slices of bread, the spike in sugar goes way up, in comparison to drinking carrot juice.
Now, I will also say that Cucumbers are a WONDERFUL substitute for carrots. They are low in sugar, they are high in natural organic minerals and they don't have a strong taste to them, as to change the taste of the other veggies in the juice.
Here's just a bit of wonderful news about Cucumbers most don't know:
1. Cucumbers are a FRUIT, not a vegetable
2. Cucumbers contain sterols, which help in lowering cholesterol
3. Cucumbers are a natural diuretic
4. High in Vitamin C, A, K and potassium
5. Cucumbers are low in calories and great digestive aids
6. Cucumbers are a great substitute for carrots when juicing
7. Cucumbers are WAXED so be careful not to eat the skin
English cucumbers, which are housed in plastic, and they are longer and narrower are our choices for cucumber eating, if you cannot find a good natural foods market or organic, waxless kinds.
Be careful, because even the natural food grocery stores carry waxed cucumbers, and it's important to eat the SKINS because they carry great nutrients, so please try to find the waxless kinds....as eating waxed cucumbers will inhibit the absorption of the nutrients.

3 large Cucumbers (unwaxed and unpeeled)
1 cup Parsley
1 cup Cilantro
1 Red Bell Pepper
2 large Green Apples
(good for two people)

Cool as a Cucumber
3 large Cucumbers (unwaxed and unpeeled)
1 cup Green cabbage
1 cup Parsley
3 Golden Delicious Apples
1 large Green Zucchini

4 Large Cucumbers
1 Large Beet with greens
2 Large Pippin Apples
2 ribs Celery

The Three C's
4 large Cucumbers
2 cups Chard
4 ribs Celery
(great for digestion)

Basically, remember this......if your juicing recipe has carrots and you want to substitute, then look at it this way. For every ten carrots, use two large cucumbers. If the cucumbers are smaller, then for every 7 carrots, substitute the two smaller cucumbers.
Also, remember, that if you are substituting the carrots with the cucumbers, it will not taste as sweet, nor will it have the benefits of all that carotene, but in today's world, we must make adjustments to help our bodies heal.
